The Gakenke washing station was built in 1991 in the Gatara Commune in the Kayanza province. It collects cherries from over 2600 local coffee farmers and processes more than 750 tons of coffee. Grown in Burundi's volcanic soil at 1,672 MASL, the coffee cherries are fully washed and are left in fermentation tanks to ferment for at least 10 to 12 hours. Afterwards they're placed on long raised tables to dry under natural sunlight, the drying process typically takes 9 to 14 days. This form of processing creates syrupy notes of lime and raisin.
